Sweet Potato Gocchi made at work today with the little ones
bake 1 large sweet potato
1 white potato
1 1/2 cups flour
1 tsp of salt
1 tsp of pepper
1 egg
1 egg yolk
peal and mash potatoes, add flour salt and pepper.
blend in eggs, knead dough with flour into a bowl. roll out into a long sausage shape. Slice into little 1 inch"
shape, roll a fork down Gnocchi for decorative lines. Boil and saute in butter garlic and fresh herbs. Sprinkle parm cheese on top and enjoy!!
Making Gnocchi with the kids was fun and a little crazy with such a large group lol. The kids love getting their hands dirty and today they sure did! I love hearing all their little comments of how they like to make things at home with their parents. Kids like to have jobs and to feel needed. Even if you don't need their help in the kitchen it's nice to make them feel like you do lol, it gives them a sense of purpose.
