Madeline sharing her favoirte granola reicpe with me




Adapted from "Grazing" by Julie Van Rosendaal.

Granola: (nut free)
-6 cups large flake granola
-1 cup sunflower and pumpkin seeds
-Dash of cinnamon
-1/4 tsp salt
-1 cup chopped raisins, cranberries and apricots
- 1/2 cup honey
-1/2 cup maple syrup
-1 tsp vanilla

Preheat oven to 300 F. In a large bowl, combine oats, seeds, chopped fruit, cinnamon and salt. In a small bowl stir together honey, maple syrup and vanilla. Pour over oat mixture and toss well to coat. Spread on a rimmed baking sheet and bake for about half an hour, stirring once or twice, until golden. Cool completely before transferring to an airtight container. Makes about 8 cups.  Note:  if you want the chopped fruit to be soft and not chewy, add it when granola has come out of the oven and cooled.

Madeline is a very strong little girl!! She has been a very big blessing to me as well as her Mom and brother Oliver. Madeline came into the kitchen at work to share that she is on the right medication and will no lover have to have any seizures. She is inspiring with such a light and glow around her. She is a pretty good little cook too!
