Authentic Pizza crust



Authentic Pizza Crust
  • 1 Tbsp dry yeast                                    http://www.theglutenfreevegan.com/
  • 2/3 c brown rice flour
  • 1/2 c tapioca flour
  • 2 tsp xanthan gum
  • 1/2 tsp salt
  • 1 tsp Italian herb seasoning
  • 2/3 cup warm non-dairy milk (I used unsweetened regular almond milk)
  • 1/2 tsp sugar or honey (I used agave nectar)
  • 1 tsp olive oil
  • 1 tsp apple cider vinegar
Preheat the oven to 425 F.
Combine dry ingredients in your mixer, including yeast.  Add liquid ingredients slowly and beat for 2 minutes.  If the dough bounces around in the mixer more liquid a tiny bit at a time.  (I had to do this, I probably added about 1-2 tsp. more almond milk.)
Prepare pizza pan by oiling it with olive oil.  Put a ziploc bag on your hand and spread the olive oil around the pan and grease up the bag.
Take your mixed dough and throw it on the greased pizza pan.  Use the greased up ziploc bag hand to spread the dough evenly on the pizza pan.  Make a little crust edge.  Bake for 10 minutes, then remove from oven.  Transfer to a pizza stone if you have.  If not, just lift the crust up off the pan to ensure it isn’t sticking.  Then top with your favorite toppings.  Return to the oven for about 7-10 minutes longer till your pizza is completely cooked thru and toppings are hot.

The Gluten Free Banana Cookies recipe that I made with the children at church today.


               Gluten Free 
Banana Cookies
1 ½ cups Gluten Free flour Blend
1 tsp. salt
1 tsp. baking soda
1 tbsp. cinnamon
3 cups rolled oats
1 cup butter
¾ cup brown sugar
¾ honey
1 tbsp of ground flax
2 eggs
1 tbsp. vanilla
2 ripe bananas

Directions
Preheat oven to 350 degrees.
Mix first 5 (dry) ingredients in bowl and set aside. In large mixing bowl, mix butter and sugars together until well combined. Add eggs, one at a time, then add vanilla and bananas.  Mix until bananas are well incorporated, then add flour mixture. Stir until just combined; over mixing will make the cookies tough.
Spoon cookies onto baking sheet and cook for 12-13 minutes. Cool on wire rack.
Cookies can be stored in airtight container for 3-4 days. Or, uncooked dough can be frozen in logs and sliced for later baking.

Blueberry gluten free muffins



Dry ingredients
2 cups of gluten free flour blend
1 tsp of cinnamon

1 tsp of baking soda
1 tsp of sea salt
1 tsp of baking powder
2 tbsp of ground flax for your omega 3 essential fatty acids
1 tbsp of hemp seeds  are very high in protein
Blend together 

Stir together 
Wet ingredients
1 3/4 cup of rice milk
1/4 cup of molasses
1/2 cup of coconut oil

Add all ingredients together and stir until well incorporated, add 1 cup of blueberries or raisins whatever you like?  
Bake at 350 for about 10-15 minutes. Enjoy warm I know you will!

Gluten and dairy are hard to digest so it is good to make some healthy baking so you can enjoy something that tastes good and is really good for you!

Squash wellness soup


This soup is GMO Gluten Dairy Free

In a medium size pot heat, 
1 tbsp of olive oil, add the following ingredients
1 tsp of garlic minced
1 onion diced small
2 celery ribs diced small
3 carrots  diced
1 yam diced small
1 small butternut squash diced small
1 tsp of turmeric
1 tsp of sea salt
1 tsp of pepper

Saute for about 10 minutes. Add 3 cups of low sodium organic vegetable stock.
Bring to a boil for about 15 minutes, mash with a potato masher, season to taste with salt and pepper.

Serve and enjoy something really healthy and tasty!!!

A healthy chocolate cake recipe to feel good about eating



I am a chocolate fanatic and I love eating dark chocolate everyday just to satisfy my grave.

Dark chocolate is actually really good for your heart!!


I wanted to make a cake today that was chocolate and healthy so I came up with this one

This recipe is gluten free and dairy free

2 cups of almond flour
1 tsp of sea salt
2 tsp of baking powder
2 tsp of baking soda
1/4 cup of ground flax
1 tsp of cinnamon
1 cup of coco powder 
2/3 cup of coconut sugar
1/4 cup of molasses
1 tsp of vanilla
1/2 a banana mashed
2 cups of rice milk 

blend dry ingredients, add wet and blend for about 2 minutes until smooth. bake in muffins cups at 350 for 10-15 minutes. I served it with a some coconut ice cream and some pomegranate seeds on top. Yummy and healthy!!! It totally hit the spot!!!
