Cooking classes making Birds nest cookies with the little ones at the ARC



Birds Nest Cookie Recipe 





Baking with the kids was as blast today! We danced to Happy by Pharrel. We drew pictures of birds and the one that looked the most like the bird I brought one a cooking tool. The kids loved it! I picked my special helper out that got to wear one of the aprons my sister made. You could tell the children felt pretty special! I love how baking and cooking can be so educational by how the kids got to learn a lot about math skills with measuring and fractions. I feel very blessed for this group of kids who are so kind! The manners and kindness towards each other is very special to watch! We measured ingredients, rolled out our dough and dipped it into our coconut walnut mixture. We baked our birds nest cookies and then dolloped some yummy raspberry jam in the middle.   Seeing the look on their faces when they left of how proud they to show their parents of their own little creations really touches my heart and gives me the strength to do what I do.

 

Dry ingredients
1 cup of flour
¼ tsp of salt
¾ cup of chopped walnuts
½ cup of shredded coconut 
¼ cup of softened butter
¼ cup of brown sugar
1 egg separated yolk from whites
½ tsp of vanilla

Directions
Mix butter, sugar, egg yolk and vanilla. Work in flour and salt until dough holds together. Shape dough into 1 inch balls. Beat egg whites slightly. Dip each ball into egg white and then roll in nuts and then coconut. Place 1 inch apart on a greased cookie sheet. Press thumb deeply into the center of the cookie. Bake for 10 minutes at 350 degrees. Remove from cookie sheet to let cool. Fill with raspberry jam in the center.
