The best sweet turkey croissians ever





Slice a crossiant open
spread raspberry jam on one side
layer turkey breast
leafy greens
spread mayo on the other half of the croissiant
add brie cheese if you like.

This sandwiches is so good a true crowd pleasure

Quinoa Salad with orange basil dressing




Recipe
boil 2 cups of water with 1 1/2 cups
quinoa. Cook for about 10 minutes
until water has been absorbed,
fluff quinoa and let cool in the fridge

Roasted Corn
on a cook sheet roast corn with a drizzle of olive oil
and season with salt and pepper and a little minced garlic
Roast for about 8 minutes. Cool corn down in the fridege

Dressing,
1/2 cup of olive oil
1/4 cup cup orange juice
1 tsp of garlic minced
5 basil leaves
1 tbsp of grainy mustard
1 tsp of salt
1 tsp of pepper
1 tbsp of honey
blend all together in a blender

Dice about 1/4 cup of dates
dice 1/4 cup of red onion
1 cup of diced red pepper
1 cup of crumbled goat cheese optional
1 cup of pumpkin seeds optional

Toss all your ingredients together, pour dressing over, mix well and adjust seasoning to taste with salt and pepper.

I hope you enjoy this salad! I love quinoa and I love experimenting with it so much because you really can do so much with it, from baking to salads even eating it for breakfast like oatmeal. Quinoa has the most protein of all grains and has all 9 essential fatty acids that is very good for your over all health and brain function.

BBQ Chicken SALAD



3 grilled chicken breast with bby sauce on top.

2 head so romaine lettuce chopped
1 red onion sliced
1/4 cup of black beans
1/4 cup of chopped dates
1 avocado diced
1/2 a cucumber diced 
1/2 cup of crushed corn chips on top

Dressing
1/2 cup of olive oil
the zest and juice of 1 lime
1/2 a tsp of garlic minced
1/2 cup of mayo
1 tsp of pepper
1/2 tsp of salt 
1 tbsp of honey
1 tbsp of dijion mustard
blend all together in a food processor season to taste and enjoy!

Toss romaine in dressing and top with remaining ingredients in layers. Slice chicken on top and enjoy!


Enjoy this salad for dinner and pack some up for your lunch the next day to enjoy!

My Breafast Hashbrown veggie bake

 1 bag of frozen hash browns 
2 peppers, 1onion sauteed and seasoned with salt and pepper 
3 cups of cheddar cheese grated 
8 eggs whisked with 1/2 cup of milk 
1 tsp of salt and 1 tsp of pepper 
2 tbsp of dried parley 

Whisk all together in a large bowl and pour over hash browns. Bake in the oven on a cookie sheet  lined with  parchment paper for about 15-20 minutes. Serve with salsa and if you like fill a tortilla shell up with mixture and a little extra cheese for a Texas style breakfast wrap

BBQ Chicken Pizza



Pizza crust home made or store bought

BBQ sauce on the bottom
diced cooked chicken
sauteed pepper and onion
cheddar cheese
peas and carrots

Broil in the oven for about 10 minutes serve and enjoy a not so traditional pizza. Kids love this one! I had a child at work today say she wanted more veggies with her pizza today for lunch. I thought wow that's awesome that the kids love the carrots and celery I served them  just has much has the pizza!!

Easy, Healthy, Tasty, Butternut Squash Macaroni and Cheese

 

Recipe 
1 box of macaroni noodles cooked, strained, rinsed.
Slice butternut squash in half and lay flat in a glass dish with a little water on the bottom. Bake Squash for about 1 hour. When squash is cooked all the way through the skin should just peel off. Once the skin is all off dice dice squash up and puree in a food processor. 

Cheese Sauce
in a pot heat 1/2 cup of butter when butter has melted add 1 tbsp of paprika, 1 tsp of pepper 2 tsp of salt 1/4 tsp of onion powder and 1/4 tsp of nutmeg. Add  1/2 cup of flour whisk together add slowly 2 cups of whole milk. Continue to whisk until sauce is nice and thick. Add pureed squash, and 2 cups of medium cheddar cheese and any other cheeses you like. Adjust seasoning with salt and pepper if needed. Pour macaroni noodles into pot with sauce stir and pour into little muffin tins that are  paper lined  bake for about 15 minutes.
Kids love Macaroni and cheese and this recipe is a great way for them to get some extra nutriments from the butternut squash.
Butternut squash is Low in fat, butternut squash delivers an ample dose of dietary fiber, making it an exceptionally heart-friendly choice. It provides significant amounts of potassium, important for bone health, and vitamin B6, essential for the proper functioning of both the nervous and immune systems. The folate content adds yet another boost to its heart-healthy reputation.
