Easy, Healthy, Tasty, Butternut Squash Macaroni and Cheese

 

Recipe 
1 box of macaroni noodles cooked, strained, rinsed.
Slice butternut squash in half and lay flat in a glass dish with a little water on the bottom. Bake Squash for about 1 hour. When squash is cooked all the way through the skin should just peel off. Once the skin is all off dice dice squash up and puree in a food processor. 

Cheese Sauce
in a pot heat 1/2 cup of butter when butter has melted add 1 tbsp of paprika, 1 tsp of pepper 2 tsp of salt 1/4 tsp of onion powder and 1/4 tsp of nutmeg. Add  1/2 cup of flour whisk together add slowly 2 cups of whole milk. Continue to whisk until sauce is nice and thick. Add pureed squash, and 2 cups of medium cheddar cheese and any other cheeses you like. Adjust seasoning with salt and pepper if needed. Pour macaroni noodles into pot with sauce stir and pour into little muffin tins that are  paper lined  bake for about 15 minutes.
Kids love Macaroni and cheese and this recipe is a great way for them to get some extra nutriments from the butternut squash.
Butternut squash is Low in fat, butternut squash delivers an ample dose of dietary fiber, making it an exceptionally heart-friendly choice. It provides significant amounts of potassium, important for bone health, and vitamin B6, essential for the proper functioning of both the nervous and immune systems. The folate content adds yet another boost to its heart-healthy reputation.
