My famous veggie vegan brownies

These brownies have a very long story to them lol, one of the first memories of me making these was I think 4 years ago for this little boy who couldn't eat anything that wasn't vegan.  I found this recipe and did some alterations and made it my own. When this little boy tried this brownie he looked at his teacher and said, "Really I can eat this?" with such surprise because it tasted too good he thought for him to be able to eat it. lol. I have met some pretty special people in my life and sharing these brownies with them has been a wonderful way for me to express my heart to my friends and also to make new ones by sharing these brownies and the recipe to so many people. They are pretty good, I have to say so and really healthy too! Kayla is like me and I think like every other girl when it comes to having a sweet tooth and loving chocolate. I thought it would be fun to make these together for a healthy treat that is actually good for you.  We started grating our zucchini and carrots. Then we measured out the dry ingredients and the wet. We boiled some hot water to be poured over the dry ingredients to create the batter. With a spoon we stirred everything together until smooth and baked the brownies in a 9 x 13 dish that had been greased. The brownies got baked for 20 minutes. I like to cut them into squares and freeze them to have them ready when ever you like, just thaw it out 15 minutes before they are enjoyed.

Kayle, thank you for being so much fun to cook and bake with, you are truly gifted in so many ways!!Thank you Brayden as well! You are a very special boy with so many gifts just like your sister. Thank you Kate for allowing me to come and spend time with you and your amazing kids! You and your husband should be proud of your two polite kind, gifted children.

Kayla and Brayden are some pretty special, talented kids that I have been blessed to meet. Through meeting their wonderful Mother Kate first, who I can't say enough about of how sweet and kind she is. Kate  explained to me of how she wants to be able to solve meal times with their families busy schedule and not struggle with trying to get more vegetables and whole foods into her children's diet. I am so thankful to God for putting this family into my life where I can share my passion and experience to hopefully make life a little bit easier and healthier for this wonderful family. Kayla is a lovely young lady who is very gifted in so many ways and has taken on the challenge of cooking with me in the kitchen to discover that she is very gifted in cooking as well! Kate explained to me that the children had to go to swimming in an hour away from when we started cooking. So that was not a problem at all! Thankfully I actually like challenges when it comes to getting healthy food to be made in a short time. Healthy food really can be fast food if you are organized! That really is the key to getting things done on time and efficiently. I really like to stress cleaning as you go when preparing food. No one wants to have a big mess to clean up at the end of dinner time. If you wash the the big dishes, like pots and pans right after you use them so they can be put away, it really helps. Also it's important to wipe and clean your working space so you are able to stay focused at each task at a time when preparing meals. I'm sorry I tend to ramble when it comes to cleaning as you go lol, it is actually a passion of mine to have a clean and organized kitchen before and after meal times. Anyway, back to the cooking with Kayla. I asked Kayla to start some chopping for our Salsa Chicken. I gave her some peppers, some onions and got her to chop them up so we could add them to our heated pan with a little olive oil. Kate was in charge of sauteing the vegetables just until they became soft and the onions started to caramelize.
The next step was searing some chicken breasts in a pan with a little salt and pepper on top. Once the chicken was golden on each side we added it to the pan with the vegetables as well as 2 cups of salsa and 2 cups of chicken stock. We placed the lid on and simmered everything together for 30 minutes. The chicken didn't have to be completely cooked in the pan before it went into the pot with the rest of ingredients because it becomes cooked in the simmering part with the salsa and stock. The salsa chicken dish turned out wonderfully and was cooked just in the right time. Kate had set the table and prepared some rice just before I got there for the cooking so that made things even easier for this family to come home after work and swimming to be able to sit down to together and enjoy a wholesome, healthy dinner as a family. I suggested   how to enjoy this dish with serving the rice on the bottom and a scoop of salsa chicken over top. Then for toppings they had some grated cheese and sour as well as some home made guacamole that Kayla made so perfectly. Some tortilla chips where served on the side for a nice Mexican treat to tie the whole dish together. My one week gluten free dairy free meal plan for only 5 dollars


These days we are all struggling with different kinds of allergies from our  environment and mostly our food. Gluten seems to be a big topic these days. There can be some confusion around a gluten free diet. Sometimes when we try to eat more gluten free products we end up eating more sugar and other ingredients that we might not even know what they are. When thinking about eating a gluten free diet think of what is all ready naturally gluten free. For example an apple plain and simple snack with a little peanut butter is totally gluten free. The tricky thing avoiding foods with gluten is that they are highly addicting and are hard to avoid even sauces we use in our dishes can have hidden gluten. Make sure to get your testing done but don't for get that instolerance are very common more actually then being diagnosed with actual  disease. Just listen to your body when you eat something that doesn't feel so good after you eat, do your best to avoid it for a little while and then do the elimination as you go. Diary intolerance problems are becoming more and more common as well! When choosing different options for dairy try making your own almond milk. Sometimes the rice milk and almond milk you buy has other ingredients that you don't really want to be drinking. Some rice milks have canola oil and extra sugar in them.  Children who are suffering from allergies to foods they most likely are allergic to canola oil. Y




ou could be helping your child with taking out the dairy however you might be still feeding them foods that they will react too. GMO ingredients are hard to avoid that is for sure. We still have to treat ourselves to the treats and foods we like it's just good to be aware of somethings in our everyday foods that might not be as healthy as we think they are.

Creating healthy foods with some really amazing children

 My new clients Brayden and Kayla

I can't even express how blessed  I feel to have met their mother Kate at my work one day and very quickly we became very good friends all over talking about nutrition and our faith. Kate is an amazing woman who I truly admire for what a good person and mother she is!  She is truly an angel who is so kind and so loving! She wanted help with getting her children to get more involved in the kitchen cooking healthier snacks and creating nutritious meals at dinner time. One of Kate's issues was not having time after work to prepare a healthy meal for the family and not knowing what to make that the whole family would like. I was so excited to tell Kate that I would totally be up to helping her and her kids to get cooking some really tasty healthy meals. I met her beautiful children and instantly felt a connection to them. We had so much fun cooking and creating together!! Kate the mother was so pleased to see her kids having fun chopping vegetables sauteing and preparing a lasagna and salad for their family to enjoy for dinner. When dad  got home from a long day at work to come home to a happy family with dinner in the oven a happy mom and excited kids, he had  such a look of peace. Kate told me she never even has time to set and actually eat with the family because she is so busy cleaning up and getting everything organized. I felt bad to hear that and I am  doing my very best to train the children to help clean as they cook so the kitchen isn't a big mess that no one wants to even try to clean up. Cleaning as you go, washing pots, rinsing dishes and loading the dishwasher before dinner can actually create a calmer dinner time. This family is truly special to me, I am so thankful to heart that they are enjoying the recipes from my cook book and getting excited to help prep and prepare meals that are really good for them. So far we have made lasagna, salad, smoothies, granola yogurt cups and zucchini grilled cheese. Our next task is going to be my famous salsa chicken and my veggie vegan brownies. For any of you who are struggling with finding the time to create healthy meals and having trouble getting their children to eat their vegetables then I am you girl. I can help and I actually love to teach families of how easy and how tasty it can be to eat clean and healthy. It is pretty cool how God puts the right people into your path at the right time. This family has blessed me because I am getting to share my passion in a way that is providing some useful tools to help them. I have made some new friends that have touched my life in a very special way!!

Kayle doesn't actually like vegetables too much yet it was pretty funny because Kate her mom told me of how Kayle wasn't sure she would like the lasagna that was packed with veggies. When she served her self a big slice and enjoyed all of it Kate was pretty happy about that!!

Both Brayden and Kayle love smoothies so making some smoothies and freezing them for the week got them pretty excited!! It's cool to look into your freezer and find treats that are actually good for you and they taste amazing!!

Getting your kids helping with meal time is the best thing you can do! It helps you and it teaches them some really valuable life tools that they will use their whole life.















2 cups of oats
1/2 cup of brown sugar
1 tsp of cinnamon
1/2 cup of slivered almonds
1/2 cup of dried cranberries
measure in a bowl 

 in a pot heat
3 tbsp of honey
3 tbsp of coconut oil
1 tsp of vanilla 
pour over dry ingredients

spread on a cookie sheet and bake for 8 minutes at 325
cool and store into containers
make your own yogurt cups
pomegranate seeds on the bottom or berreis
Greek yogurt and then in a sepearte container fill with your granola for the perfect snack.
Kids love creating their own snacks especially this one!
