Chocolate Cake baked with a speical little lady!

 Growing up chocolate cake has always been my favorite treat! Anyone who knows me knows how much I just love chocolate!!! This little girl Meadow whom I baked some chocolate cup cakes with also loves chocolate!!!! Her Auntie was so sweet to surprise Meadow with a one on one baking class with me. We had a great time!! Meadow wasn't able to celebrate her birthday on the day this year because of her Uncle's health. Her Uncle had heart surgery that put things on hold a little for her family. Her Aunt was telling me of how much they have gone through and she wanted to do do something special for Meadow. I was touched by their story and felt very blessed to be apart of making such a special little girls bday wish come true. It is amazing how cooking and baking can bring people together! Kim said Meadow's Auntie was telling me of how much kindness was shown to them through baking from their neighbors while her husband was going under heart surgery, their hearts were touched so much by the out pour of people love for them through cooking and baking!

You may never know how much it may mean to someone if you simply share you passion for cooking with them, it truly is an act of kindness that will always be remembered.

I encourage you today fine a recipe you like and bake a little extra for your neighbor or friend it might be just what they needed, something sweet to eat and a memory to cherish and  remember. It's always nice I think to find ways to brighten someones day and the amazing thing is it brightens your day in return!





The Perfect chocolate cake

1 1/2 cup of flour
1 1/2 tsp of baking powder
1/2 tsp of baking soda
1/4 tsp of salt

1/2 cup brown sugar
1/2 cup of coconut sugar
3/4 cup of cocoa powder
3/4 cup of butter melted
2 eggs 1 tsp of vanilla
1 cup of milk


Directions
in a bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
In another bowl, combine the sugar cocoa. Add  the butter, eggs vanilla and beat with an electric mixer at high speed or until mixture is smooth. At low speed, add dry ingredients alternately with milk. Scoop the batter into the molds.
Bake for 25 minutes at 320

Chocolate frosting
1 stick of butter softened
1 tsp of vanilla
2 cups of icing sugar
3/4 cup of coco powder
3 tbsp of milk
