California chicken grilled panini



 Make some bbq chicken for dinner and turn it into a great lunch for  the next day

2 slices of your favourite whole grain bread
1 tbsp of mayo
1/2 avocado sliced
a few spinach leaves
1 thin slice of red onion
1 slice of havarit cheese
3 strawberries sliced
1 bbq chicken breast sliced

layer  sandwich with your ingredients, spray your panini grill and
grill for about 2 minutes on each side.
Slice serve and enjoy!

My Healthy, Pomegrante Bellini Cocktail





4 cups of frozen peaches
2 cups peach cocktail juice blend
1 cup of ice
blend in a blender until nice and smooth.

pour frozen peach mixture in to a martini glass.
Pour pom juice over top with a splash of peach schnapps, maybe a little bit more than a splash, just saying!




Watermelon Feta Salad Strange But Amazing!



1 large watermelon, rind removed and cut into large chunks

1 lemon, juiced and zested
1/2 cup olive oil
Sprinkled sea salt and freshly ground black pepper, to taste
1 large handful fresh basil, mint or cilantro 
1 cup feta cheese, crumbled or cubed
 a drizzle of balsamic reduction optional  

Directions

  1. Toss the watermelon into a large bowl and add everything else. Toss gently and serve.
 It's  a strange combination of flavors but it works, because the feta is salty and the watermelon is so  sweet. Try it out, feta doesn't just have to be for Greek Salad!

My Orange Rosemary Chicken



 




Ingredients for rosemary rub

the zezt and juice from 1 orange
1 tsp of garlic minced
In a bowl measure out
1/4 cup of brown sugar
1 tsp of red chilies
1 tbsp of chopped fresh rosemary
1 tsp of black pepper
1 tsp of salt
1 tbsp of grainy mustard
 


In a glass dish place chicken breasts, drizzle vegetable oil over top.
Rub rosemary rub over chicken, bbq on low until chicken is cooked.

Top chicken with orange pepper salsa

Orange salsa
Peel and dice 2 oranges
1/2 a red onion diced small
1/4 cup of diced red pepper 
a pinch of salt and pepper
1 tbsp of olive oil 
1 tbsp of chopped parsley

mix it all up in a bowl and serve over chicken 

Serving suggestions
Wild rice and mixed greens for a light  and healthy meal!
 A nice glass of white wine goes pretty good too!

Easy and healthy! Avocado, mango, banana ice cream!











4 bananas
3 avocados 
3 large ripe mangoes
1 tbsp of honey

Dice fruit and freeze in zip lock bags.
Once fruit is frozen, blend it in a food processor until smooth.


The easiest, healthiest ice cream recipe I have trired and so tasty too!

Homemade Pop Tarts and Pizzas using puff pastry





2 cups of cream cheese blended with
1/2 cup of icing sugar
1 tsp of vanilla 


Puff Pastry all ready made in the freezer section at the grocery store

Roll out puff pastry and cut in 2 to 4X6 rectangles for each pop tart.
On one side of the pastry fill with 1/4 cup of cream cheese filling
and 1/4 cup of your favorite jam. Strawberry or blueberry tastes really good.
You can even use Nutella Haszelnut Spread. 
Place the other piece of puff pastry on top and pinch down the edges
with your fingers or a fork.

Brush pastry with an egg wash and bake on a pan with parchment paper
at 350 degrees for about 15 minutes. Keep a close eye on them baking,
the top should be nice and golden and flaky.

They take a little bit more effort than just pulling them out of the box from the
freezer, but once you make them you won't want to have a pop tart any other way!

Puff pastry is such an easy thing to use. For dinner you can roll out the whole piece
and top it with your favorite gourmet pizza toppings. Bake on a baking sheet, or better yet through it on the bbq.

Toppings suggestions
drizzle pastry with extra virgin olive oil and a sprinkle of sea salt and a little pepper 

roasted mushrooms and caramelized onions, and grated Parmesan cheese

roasted red peppers, Italian salami artichokes, and Mozzarella cheese

Pesto, spinach grilled chicken, red peppers and onions and topped with sun dried tomato Havarti cheese.

Taco style
ground beef made with taco seasoning packet. Diced olives,  red onion, red pepper, jalapenos,and medium grated cheddar cheese. Top with shredded lettuce a few dollops of salsa over top and some sour cream to finish it all of.

Teriyaki glazed halibut




In a glass dish place halibut
pour your favorite store bought teriyaki sauce over top.
Bake for at least 25 minutes.

Serve with Asian slaw
grate 3 carrots
dice 1 red onion
grate 1/2 a cucumber
a bag of cowlsaw mix of cabbage
Choose your favorite Asian dressing, sesame orange or peanut dressing

Steamed coconut rice
3 cups rice
1 can of coconut milk
5 cups of chicken stock
1/4 butter
3 tsp of salt

Bring all ingredients together in a pot on low, boil for about 20 minutes

Serve fish over rice and slaw on the side.

A light summer dinner, how can you go wrong!

 

Grilled Pineapple for Dessert


 

You will need
milk chocolate chips
pineapple
coconut ice cream
shredded coconut



Peal the skin of pineapple,
slice pineapple into thin wedges

Melt some milk chocolate chips over a double boiler

Grill pineapple on bbq, the pineapple's natural sugars will come out and
make it nice and sweet. At lest 5 minutes on each side should be enough.

On plate lay pineapple down, top with your favorite ice cream, coconut tastes amazing!
Drizzle chocolate over top and sprinkle some toasted coconut.


Everything tastes better grilled and when you try this dessert you will agree!

My Yummy Orange Creamsicle Cup Cakes

                                     
Ingredients
1 vanilla boxed cake mix
1 can of orange pop
instant vanilla pudding mix
orange food coloring
dream whip

Directions
Make cake according to dirctions on  cake box, add
2 drops of orange food coloring
1/2 cup of orange pop
Bake, and cool cup cakes

Icing
Fold dream whip with vanill pudding and 1/4 cup of orange pop.

Top cup cakes with icing and freeze them. To serve pull cup cakes out of the freezer 10 minutes before. They taste really good when they are slitely frozen.
