Meal planning a huge budget and time savor!!

I am currently working with a mom who has 3 children ages 6 and under. Sarah, my client was having a difficult time juggling, school in the evenings, taking care of her children, working from home and trying to spend less time at the grocery store. In the two visits I have worked with her I have created 2 weeks of meal plans including recipes from Monday to Friday. I have done a tour with her the first week at the best places to shop for deals on quality food. I have given her cooking tools and guided her  how to prepare for the whole week without having to run to the store once! Can you imagine how nice that would be not having to run to the store every day just to put a meal on the table? Today I created Sarah a meal plan of salmon with wild rice and salad, Mexican chicken burgers and vegetable chili as well as chicken pesto pasta salad. I did a simple shop for her, dropped it off and we prepped the weeks worth of meals in less then an hour, pretty awesome hey!! When Sarah and I came up with this awesome plan of creating bins for each meal of the week that just fit right into the fridge with everything already prepped for each meal we were both so satisfied looking at her organized fridge!! You would only appreciate this if you have any sort of OCD with organizing like Sarah and I both do lol..

It feels really good to be able to help someone with my experience and passion for my work. When she said to me that I have made her life easier and she feels less stressed I felt pretty good! Life is stressful and sometimes overwhelming and if we can help each other out using our gifts then I think that is pretty cool! I feel blessed and very thankful for this little family and am very happy to make dinner time just a little bit easier and healthier.

My hope is to help many more families out with this simple tool of doing my plan of shopping, meal planning and preparing just one day a week. I can save you money and teach you at the same time how to be a healthy gourmet chef in the comfort of your own home! I also can show you how to get your children to eat their vegetables with no fuss!

My message for the day to think about! When you feel overwhelmed and that life is expecting too much from you, remember you are not alone! If you just shared that frustration of thinking you have to be doing so many things to keep up with everyone else. You would be surprised how many other woman feel the same way and that we can only do so much! I actually find the humor of sharing my anxieties and worries because when you talk it out with someone who is very much the same you all the sudden can see how funny our behaviors are and you will see it is pretty funny!

My Brownie Story for my cook book

I am very excited that lots of recipes and stories  for my cook book are starting to roll in! Thank you to everyone who has submitted their recipe they are all so great!  This is a story about how my brownies got started and why they are special to me!

Chef Andrea was cooking in the kitchen making up some desserts when one day she came across a recipe that was vegan and she remembered that Shane a little boy who attends the kindergarten couldn’t have dairy or eggs in his desserts. Chef Andrea always felt bad  that Shane couldn’t have the treats that the other children would have. Chef Andrea started mixing up some yummy brownies. She started with measuring the flour then she measured the coco powder and the rest of the ingredients. She thought there wasn’t that much nutrition in these brownies, so she thought that she could add  carrots and some zucchini to make the a little healthier, so she did just that! She grated up her vegetables and then she mixed everything together and baked them in the oven. When they came out they smelled so good!! Ms Mohanan tried one and said those are yummy! Then the other teachers came in and tried them too and they loved them as well. The true test was the Shane the little boy Chef Andrea made them for. Ms. Smith one of the kindest hardest working teachers came into the kitchen and said that Shane loved the brownies so much he couldn’t believe that he even could eat it! He looked up at Ms. Smith and said” really Shane can eat this?” with such disbelief. She told him “Yes, Shane you can”. They both looked at each other and smiled and enjoyed them with the whole class room.

These brownies are very special to Chef Andrea because she has made the for all kinds of events and everyone just loves them. Most of all she has made friends just by sharing her heart and brownies with everyone to enjoy! When you use your gift to bless others that is one of the best things you can do in life. Chef Andrea’s gifts are cooking and encouraging! What are your special gifts and how do you like to use them to bless the world?

I  just wanted to say that I am so thankful for all the teachers and children that I cook for. I hope you always taste the love in my cooking because I truly love all of you so much!! Each one of you is a blessing from God!!
Sincerely Chef Andrea

German Borscht

Today making, borscht, took me back to my child hood. My mom always took us to to our Grandparents house for lunch and my Grandma would have a big pot of Borscht on the stove waiting for us. When I made this recipe today, I couldn't help but be comforted by the smell, as funny as it is the smell of cabbage and beets. It really is amazing how a simple meal can create such  wonderful memory

 Recipe
Next time your are cooking for someone always keep in mind you are creating a memory that my last a life time! Your recipe  doesn't have to be amazing for it to touch someone's heart, it's  the love you put into that warms the heart and tummy!

1 head of cabbage shredded
10 beets diced
2 onions diced
3 ribs of celery diced
1 can of diced tomatoes
10 potatoes diced
5 carrots diced

Add to a pot cover with water, season with salt and pepper.
Simmer on low for 1 hour until vegetables are soft.

Serve with sour cream and some whole wheat bread and butter.
