Gluten Free Dairy Free healthy but so tasty!! Chocolate Cake



2 cups flour
1 cup coco powder 
1/2 cup coconut sugar
1 tsp salt
2 tsp baking powder
2 tsp baking soda
1/4 cup of ground flax

Wet
1 cup of rice milk
3 tbsp of molasses 
1/2 cup coconut oil
1tsp of vanilla

stir dry ingredients until well incorporated. Blend wet ingredients with dry until smooth.

Pour into a greased cake pan, bake for 10 minutes at 350

Serve warm with coconut ice cream, you won't believe it is as healthy as it is. It tastes like an Oreo cookie!

Use almond flour and almond milk if you like. Try adding peanut butter or almond butter to make it richer, just 1/2 a cup should do the trick.

Fiest a grilled Cheese





Slice bread of your choice, flat bread works best!

spread salsa on the bottom
in a food processor 1 cup of grate cheddar cheese with
1/2 cup of chickpeas
salsa with cheddar cheese chickpea mixture.
Top with other half of bread and grill just like you would as a grilled cheese.

Serve with avocado for a perfect lunch

Blackberry Antioxidant Peach Smoothie





1 cup of ice
1 cup of acai juice
1 cup of blackberries
1 peach peeled and diced

add some hemp hearts or kyle for extra nutrition 

Blend in a blender and enjoy.

Vegan Mango Banana Honey vanilla ice cream

So easy and so tasty!!!
 in a bowl add 4 cups of frozen mango chunks
1 tbsp of vanilla extract.
2 tbsp of honey
3 frozen bananas

Blend all together with a hand held blender.
scoop into a bowl and enjoy!!!

Try this frozen none dairy ice cream recipe with
any fruit you like!

Try adding a little greek yogurt to it if you like?

Mangoes have tons of Vitamin C honey is a natural  healthy way to sweeten things up and bananas have a natural fat content that gives it the creamy texture.

Today I made Quiche with the babies



Quiche are so easy to make you can pretty much add anything to them once you have a good base.


We made roasted vegetable and her quiche today, we started with
pre made tart shells in a pack of 12, it's okay to cheat not everyone has time to make it from scratch.

In a pan heat a little oil, add diced mushroom, pepper, onion and salt and pepper.
Chop some fresh parley and basil about 1/4 cup full.

Saute for about five minutes.
In a bowl crack 6 eggs with 1/2 cup of milk.
Whisk until blended, add some grated cheese about 1 cup, marble is best!
Fill quiche with egg milk mixture and cheese top with sauteed vegetables and chopped herbs.

Bake on a cookie sheet for about 12 minutes at 350 degrees.

Serve with a nice tossed salad. Quiche are great for any meal especially breakfast a great way to start the day!!  The babies at work loved them they made them with a little help but for the most part they just wanted to eat the cheese while we were making them.

Honey Salad Dressing that I made with the kids at church today.



In a mason

measure

1/2 cup of lemon juice
1 cup of olive oil
2 tbsp of honey dijon mustard
1/2 tsp of salt
1 tsp of pepper
2 tbsp of honey

a bunch of fresh parsley chopped

Garden Vegetable Salad

cucumber
leaf lettuce
red onion
radishes
cherry tomatoes
shredded cabbage 
grated carrot
diced avocado

I love adding lots of vegetables to my salad I was telling the kids at Church that it's like painting a picture the more colors the better and that also means more nutrition.  The children loved squeezing the lemon juice and shaking the dressing up in the jar. Children will eat salad you just have to make it fun!!
