BBQ Chicken SALAD
3 grilled chicken breast with bby sauce on top.
2 head so romaine lettuce chopped
1 red onion sliced
1/4 cup of black beans
1/4 cup of chopped dates
1 avocado diced
1/2 a cucumber diced
1/2 cup of crushed corn chips on top
Dressing
1/2 cup of olive oil
the zest and juice of 1 lime
1/2 a tsp of garlic minced
1/2 cup of mayo
1 tsp of pepper
1/2 tsp of salt
1 tbsp of honey
1 tbsp of dijion mustard
blend all together in a food processor season to taste and enjoy!
Toss romaine in dressing and top with remaining ingredients in layers. Slice chicken on top and enjoy!
Enjoy this salad for dinner and pack some up for your lunch the next day to enjoy!

My Breafast Hashbrown veggie bake
1 bag of frozen hash browns
2 peppers, 1onion sauteed and seasoned with salt and pepper
3 cups of cheddar cheese grated
8 eggs whisked with 1/2 cup of milk
1 tsp of salt and 1 tsp of pepper
2 tbsp of dried parley
Whisk all together in a large bowl and pour over hash browns. Bake in the oven on a cookie sheet lined with parchment paper for about 15-20 minutes. Serve with salsa and if you like fill a tortilla shell up with mixture and a little extra cheese for a Texas style breakfast wrap
BBQ Chicken Pizza
Pizza crust home made or store bought
BBQ sauce on the bottom
diced cooked chicken
sauteed pepper and onion
cheddar cheese
peas and carrots
Broil in the oven for about 10 minutes serve and enjoy a not so traditional pizza. Kids love this one! I had a child at work today say she wanted more veggies with her pizza today for lunch. I thought wow that's awesome that the kids love the carrots and celery I served them just has much has the pizza!!
