Coconut Curry Stew


Recipe  serves a family of 6
1 tbsp of coconut oil
2 garlic coves minced
1 tsp of chilies
2 onions diced small
1 yellow zucchini diced  small
1 green zucchini diced small
1 tsp of curry powder.
2 cans of chickpeas
2 cups of lentils
5 cups vegetable stock
3 cans of coconut milk
2 tsp of sea


salt
2 tsp of pepper
¼ chopped basil
½ cup of apple sauce

2 cups of cooked wild rice.
Directions,
In a pot heat coconut oil add first 7
ingredients. Saute for about 5 minutes.
Add the rest of your ingredients, bring to a boil
stirring occasionally. Simmer curry stew for about 45 minutes until lentils and chickpeas are soft. Season to taste with salt and pepper.
Bring 4 cups of water to a boil, add wild rice, and simmer for about 20 minutes. Serve stew over rice and enjoy a healthy nutrition meal with the ones you love!
