Garden-Chopped-Chickpea-Salad
Orange basil dressing
In
a jar
2
tbsp of honey
2
tbsp of dijion mustard
1
garlic clove minced
¼
cup of balsamic vinegar
1
tsp of sea salt
1
tsp of pepper
3
tbsp of orange juice
3
tbsp of lemon zest
1
tsp of zest
½
cup of olive oil
4
basil leaves rolled up and sliced finely
Put
lid on jar and give it a shake.
Salad
4
cup of chickpeas
1
cucumber diced small
½
cup of diced red onion small
2
bell peppers diced small
2
avocadoes diced small
1
cup of grated carrot
In
a bowl toss salad with dressing, give it a stir and enjoy!!

This
is the perfect salad to make if you want to get lots of vegetables into your
diet as well as protein, chickpeas are very high in protein.

I
would suggest getting your little ones to help you in the kitchen, to create
some special memories together. I think it is important for children to see how
fun cooking with vegetables can be. Cooking with vegetables means more color and more color means
nutrients, you can’t go wrong with that!!
